I don't do the atkins since I am vegetarian and I don't eat meat, but I do restrict my carbs to some degree. The body needs carbs to function, so I keep it simple with potatoes, multi-grain, and natural/non processed like bananas. I also have lots of fiber. I have fibersure powder which dissolves clear in water, but I add that to my protein shakes. When I do eat carbs, I eat them early in the day so my body has time to process. I try not to eat carb heavy after 3:00 or 4:00. It's not a rule written in stone, but I try to stick to it because it keeps my stomach flat. The next part might sound lame, but I think it's true... I have a Russian friend who is thin as a rail . I made a generalization that it seems all natural born Russians are so damn thin, what are they doing? She told me about some people do not eat past 4:00 and have their dinner before that time so the body can process. I thought that was interesting. I still will eat past 4:00, but no heavy carbs. So a modified version of what she said actually works well for me.
