I'm cooking some chicken leg+thighs on top of carrots, peppers and some celery. Used some 'orange ginger' sauce on the chicken (just layered it on before sticking it in the oven). I wonder how it will taste. I think last week I went through a vegetable withdraw. Earlier I made some green beans and sweet peppers with soy and terriaki sauces and some toasted sesame oil. So.. Very.. Tasty.. I think I'm also going to work on a more low-carb diet change. I know I have some issues with carbs already (if I eat carbs then sit down, sometimes I have a hard time staying awake - normally it's a problem during weekly lab meetings, but last week I fell asleep in class, too). So, if I cut back on the amount of carbs I eat at any given time, I think that should stop the (recurring) problem. It will also help me prepare, I guess, for if I become a diabetic (which is likely).
